Boiled Crawfish, Shrimp Po-Boys, Boiled Crabs Oh My!!

While we are surrounded by some of the best food the world has to offer in Northern Portugal, I can't help but miss my all time favorite food - Hot Boiled SPICY Crawfish. As we like to say in Louisiana, if it doesn't burn your lips for at least 30 minutes after you stop eating them, then they were not spicy enough!

In Louisiana, EVERYTHING revolved around food. Holidays, Celebrations, Weekends, even Funerals. And with that in mind, we have 4 seasons in Louisiana - Crawfish, Crab, Shrimp, and Oyster. Crawfish is best from early March to end of May, but in reality, you can get crawfish as early as Christmas some years. They will be small and very expensive, you hey, when you have a craving, you have a craving! Shrimp are year round, but best prices are usually May - July for brown shrimp and August to December for White Shrimp. For Oysters, the rule of thumb is to eat Raw Oysters only in the months that contain an R. May - August do not contain an R so you would not want to eat them then - the waters are too warm. But oh man, a nice, ice cold raw oyster with a spicy cocktail sauce in January - it will make you want to Slap Ya Mama! (Name of a cajun spice company.) For Big, Fat, Juicy Females, we can only be talking about boiled crabs which is enjoyed with a nice, Ice Cold Beer in June, July, and August. Just as crawfish season is winding down, it is time to gather your friends and boil a bushel of crabs. Nothing says a Louisiana Saturday night like boiled seafood with friends, unless it is a football game in Tiger Stadium! GEAUX TIGERS!!

While we are able to cook a great Red Beans and Rice and Chicken and Sausage Gumbo using Portuguese sausage, we have not been able to get crawfish and Louisiana crabs here. However, I did pack a lot of Zatarain's Crab Boil and we enjoy Boiled Shrimp with our many friends here!! Cheers to friends and family back home - ya'll hold down the fort for us until our next visit... in crawfish season!
